Indulgent tiramisu trifle with coffee-soaked biscuits, luscious mascarpone, and rich cacao layers.
Ingredients:
  • 500.00 ml strong black coffee
  • 125.00 ml marsala (see note)
  • 3 eggs, separated
  • 70.95 gm caster sugar
  • 250g mascarpone
  • 300ml Thickened Cream, lightly whipped
  • 1 large packet of sponge finger biscuits (savoiardi)
  • Cocoa powder, for dusting
Instructions:
  • Combine coffee and marsala in a shallow dish or baking dish, and set it aside.
  • Whip egg yolks and sugar in a big bowl with electric beaters until they're pale and thick. Gently fold in the mascarpone and whipped cream until just mixed.
  • Whip egg whites in a medium bowl with an electric mixer until soft peaks form. Then, delicately fold the whipped egg whites into the mascarpone mixture using a large metal spoon.
  • Immerse the biscuits in the coffee mixture to coat the base of a 19cm square ceramic dish. Layer with one-third of the mascarpone mixture. Repeat this process twice, finishing with the cream on top. Chill in the fridge for at least 2 hours, then sprinkle liberally with cocoa powder before serving.
