Quick and refreshing summer cake.
Ingredients:
  • 1 tablespoon baking powder
  • 0.25 teaspoon salt
  • 0.5 cup skim milk
  • 1 tablespoon butter
  • 1 teaspoon vanilla extract
  • 6 tablespoons softened butter
  • 10 tablespoons brown sugar
  • 1 cup flaked coconut
  • 0.25 cup heavy cream
Instructions:
  • Preheat the oven to 350°F (175°C). Combine flour, baking powder, and salt in a bowl; set aside. Grease and flour an 8-inch cake pan.
  • In a small saucepan, heat the milk, 1 tablespoon of butter, and vanilla extract until boiling, then set aside. In a mixing bowl, beat the eggs until smooth. Gradually add white sugar while beating on high speed. Mix in the flour until a few lumps remain. Slowly pour in the warm milk mixture and stir until smooth. Pour the batter into the prepared pan.
  • Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean. Allow to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  • Combine 6 tablespoons of butter, brown sugar, coconut, and cream in a bowl until well blended. Then, spread the mixture over the cooled cake before serving.
