Delicious pierogi casserole with sauerkraut, onion, mushrooms, and pasta baked in a buttery sauce. Reheat with a splash of water at 350°F for 1.5-2 hours if made ahead.
Ingredients:
  • 3 pounds sauerkraut
  • 1 onion, chopped
  • 1 pound uncooked rotini pasta
  • 1 pound fresh mushrooms, chopped
  • 0.5 pound butter
  • 2 (10.75 ounce) cans condensed cream of mushroom soup
Instructions:
  • In a large skillet over medium-low heat, combine sauerkraut, onion, and enough water to cover. Simmer for 1 hour, or until most of the water has evaporated.
  • Bring a pot of well-salted water to a boil. Add rotini and cook until al dente, about 8 to 10 minutes. Drain the pasta.
  • Saute the mushrooms in 2 tablespoons of butter in a medium skillet over medium heat for approximately 5 minutes.
  • Combine the rest of the butter, cooked pasta, and cream of mushroom soup with the sauerkraut mixture. Cook and stir for 15 minutes, or until warmed through.
