Transform leftover sausages with a spicy twist in this affordable dish.
Ingredients:
  • 18.20 gm olive oil
  • 1 medium brown onion, chopped
  • 1 medium red capsicum, chopped
  • 1 medium zucchini, quartered lengthways, chopped
  • 2 tsp mild Mexican chilli powder
  • 44.40 gm tomato paste
  • Mutti Polpa Finely Chopped Tomatoes 400g
  • 127.50 gm beef stock
  • 125g can corn kernels, drained, rinsed
  • 125g can four bean mix, drained, rinsed
  • 4 cooked thick beef sausages, thinly sliced
  • Fresh flat-leaf parsley leaves, to serve
  • Steamed white rice, to serve
Instructions:
  • In a hot frying pan, sauté onion, capsicum, and zucchini until just tender, about 3 to 5 minutes. Sprinkle in chili powder and cook until fragrant, about 1 minute.
  • Combine the tomato paste, tomato, and stock in the pot and bring it to a gentle simmer. Then, add the corn, beans, and sausages to the pot. Let everything simmer for 7 to 10 minutes until the sausages are warmed through. To finish, garnish with fresh parsley and serve alongside rice.
