Balanced lemon bars with a subtle hint of coconut for a perfect tropical twist.
Ingredients:
  • 1 cup cold butter, cut into pieces
  • 0.5 cup powdered sugar
  • 2 cups white sugar
  • 1 cup flaked coconut
  • 0.25 cup all-purpose flour
  • 4 large eggs
  • 2 medium lemons, zested and juiced
  • 0.25 teaspoon baking powder
  • 2 tablespoons powdered sugar, or to taste
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and prepare a 9x13-inch pan by lining it with parchment paper.
  • In a food processor, blend flour, butter, and powdered sugar until they form a fine crumb mixture. Press this crust into the prepared pan.
  • Place the crust in the preheated oven and bake for 15 minutes.
  • In a bowl, blend together sugar, coconut, flour, eggs, lemon zest, lemon juice, and baking powder.
  • Take out the crust from the oven, pour the filling on top, and bake until the edges turn a light golden brown, around 20 to 25 minutes more.
  • Allow the bars to cool for 30 minutes outside the oven, then chill in the refrigerator for 2 hours until completely set. Dust with powdered sugar before slicing into 24 bars.
