Transform leftover chicken and rice into a refreshing summer salad with tangy lemon juice, savory olives, crispy bacon, and rich barbecue sauce.
Ingredients:
  • 2 cups cubed cooked chicken
  • 2 tablespoons lemon juice
  • 2 cups cold cooked rice
  • 1 stalk celery, sliced
  • 0.5 cup sliced pimiento-stuffed olives
  • 6 tablespoons crumbled cooked bacon, divided
  • 1 cup mayonnaise
  • 2 tablespoons barbeque sauce
  • 0.5 teaspoon hickory-flavored liquid smoke
Instructions:
  • Combine chicken and fresh lemon juice in a spacious mixing bowl.
  • Combine the rice, celery, olives, and 1/4 cup of bacon in a separate bowl, then add it to the chicken and toss everything together.
  • In a small bowl, combine mayonnaise, barbeque sauce, and liquid smoke. Pour the mixture over the chicken and toss until evenly coated. Sprinkle with 2 tablespoons bacon. Cover with plastic wrap and refrigerate for 2 hours to overnight.
