Lemon delicious pudding

Transform zesty lemons into a delightful winter pudding, elevating traditional lemonade to gourmet levels.
Ingredients:
  • Melted butter, to grease
  • 4 eggs, separated
  • 20.00 ml finely grated lemon rind
  • 160ml (2/3 cup) fresh lemon juice
  • 330ml (1 1/3 cups) reduced-fat milk
  • 150g (1 cup) self-raising flour
  • 215g (1 cup) caster sugar
  • Pure icing sugar, to dust
  • Extra light thickened cream (optional), to serve
Instructions:
  • Preheat your oven to 180ºC. Coat six 250ml (1-cup) ovenproof dishes with luscious melted butter.
  • Combine egg yolks, lemon rind, lemon juice, milk, flour, and 140g (2/3 cup) caster sugar in a bowl and whisk until smooth.
  • In a clean, dry bowl, use an electric beater to whip the egg whites until soft peaks form. Gradually incorporate the remaining caster sugar until the egg whites are thick and shiny.
  • Gently mix a quarter of the egg white mixture into the lemon mixture. Carefully fold in the rest of the egg white mixture. Spoon the mixture into the prepared dishes. Arrange the dishes in a roasting pan and pour boiling water into the pan until it reaches halfway up the sides of the dishes. Bake for 35 minutes until golden. Sprinkle with icing sugar before serving with cream, if desired.
