Lemon delicious puddings

Indulge in a guilt-free twist on classic lemon pudding.
Ingredients:
  • 150g butter, melted
  • 2 tsp finely grated lemon rind
  • 131.25 gm lemon juice
  • 312.50 gm SPLENDA® Granular
  • 112.50 gm self-raising flour
  • 257.50 gm milk
  • 4 eggs, separated
  • Icing sugar mixture, to dust
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced, and generously grease six 1 cup-capacity ovenproof dishes.
  • In a large bowl, combine butter, lemon rind, lemon juice, SPLENDA®, flour, milk, and egg yolks. Whisk until smooth.
  • With an electric mixer, whip the egg whites until soft peaks form. Carefully fold one-quarter of the egg whites into the lemon mixture until fully incorporated, then gently fold in the rest of the egg whites.
  • Spoon the mixture into prepared dishes and place them in a large baking dish. Pour boiling water into the baking dish, halfway up the sides of the smaller dishes. Bake for 20 to 25 minutes until golden and just set. Dust with icing sugar before serving.
