Lemon Pepper Baked Orange Roughy

Oven-baked orange roughy with zesty lemon pepper crust, perfect for all delicate fish varieties.
Ingredients:
  • 2 tablespoons butter or margarine
  • 2/3 cup Original Bisquick™ Baking Mix
  • 1/4 cup yellow cornmeal
  • 1/2 teaspoon lemon pepper seasoning salt
  • 1/2 teaspoon salt
  • 2 tablespoons water
  • 1 pound orange roughy fillet
Instructions:
  • Preheat oven to 425°F. Place butter in a 13x9x2 inch rectangular pan and melt in the oven.
  • Combine Bisquick mix, cornmeal, lemon pepper seasoning, and salt. In a separate bowl, whisk together egg and water. Dip fish into the egg mixture, then coat with the Bisquick mixture. Transfer to a pan for cooking.
  • Bake the fish uncovered for 10 minutes, then flip it with a spatula and continue baking for an additional 15 minutes or until the fish flakes easily with a fork.
