Ingredients:
  • 4 pork cutlets (250g each), trimmed
  • 1 lemon, rind finely grated, juiced
  • 1 tsp dried mint
  • 400g baby chat potatoes, halved
  • 1 red capsicum, chopped
  • olive oil cooking spray
Instructions:
  • In a bowl, combine lemon rind, 2 tablespoons of lemon juice, garlic, mint, 1 tablespoon of olive oil, salt, and pepper. Pour this flavorful mixture over the pork in a shallow dish. Cover and let it marinate until ready to cook.
  • While the potatoes are cooking, place them in a microwave-safe dish with 1/4 cup water and cover it. Microwave on HIGH for 6 minutes. Then, add the zucchini and capsicum, and microwave for an additional 3 minutes. Drain before serving.
  • Heat a well-oiled frying pan over medium-high heat. Cook pork for 3 to 4 minutes per side until desired doneness. Transfer to a plate, cover with foil, and set aside.
  • Lower the heat to medium-low. Pour in the remaining oil and add the vegetables. Saute for 5 minutes, stirring occasionally, until the vegetables are tender. Season with salt and pepper, then finish with the rest of the lemon juice. Serve the pork cutlets with the flavorful vegetables.
