Ingredients:
  • 2 lemons 150g butter beans, topped
  • 4 (about 500g) pork Scotch steaks Salt & ground black pepper, to taste
  • 27.30 gm olive oil
  • 1 410g can petite potatoes (Cowra Gold brand), drained, halved
  • 1 400g can artichoke hearts (Green Valley brand), drained, halved
Instructions:
  • Juice one lemon and quarter the rest. Boil beans in a small saucepan for 1-2 minutes until tender-crisp. Drain.
  • Season the pork steaks with salt and pepper. Heat 2 teaspoons of olive oil in a large frying pan over medium heat. Sear the pork for 5-6 minutes on each side until cooked through. Set aside and keep warm. Clean the pan with a paper towel.
  • Heat the rest of the olive oil in a frying pan over medium heat. Cook the potatoes for 2 minutes, stirring often. Add artichokes and beans, cook for 2-3 minutes until heated through, stirring constantly. Season with 2 tablespoons of lemon juice, salt, and pepper. Serve hot with pork and lemon quarters.
