Delightful lemon-basil quinoa salad, perfect for entertaining.
Ingredients:
  • 2 cups low-sodium chicken broth
  • 1 cup quinoa
  • 1 large lemon, zested and juiced
  • 0.5 cup roasted red peppers, drained and diced
  • 0.25 cup dried cranberries
  • 2 tablespoons minced red onion
  • 2 tablespoons chopped fresh basil
Instructions:
  • In a saucepan, bring the chicken broth and quinoa to a boil. Then, lower the heat to medium-low, cover, and simmer for 15 to 20 minutes until the quinoa is tender and has absorbed the broth.
  • Combine quinoa, lemon zest, and lemon juice in a bowl. Mix in red peppers, cranberries, onion, and basil until well combined.
