Lemon-Basil Shrimp Toss

Quick and delicious pasta dish with shrimp, veggies, basil, lemon zest, and seasonings. Ready in just 25 minutes!
Ingredients:
  • 8 oz uncooked linguine
  • 2 tablespoons butter or margarine
  • 1 clove garlic, finely chopped
  • 2 cups fresh sugar snap peas, strings removed
  • 1 1/2 cups julienne-cut (matchstick-size) carrots (from 10-oz bag)
  • 1 lb uncooked deveined peeled medium (31 to 35 count) shrimp, thawed if frozen, tail shells removed
  • 1 tablespoon finely chopped fresh or 1 teaspoon dried basil leaves
  • 2 teaspoons grated lemon peel
  • 1/2 teaspoon salt-free seasoning blend
Instructions:
  • Prepare the pasta according to package instructions, without adding salt. Drain well before using.
  • In a large nonstick skillet, melt a tablespoon of butter over medium-high heat. Add garlic and cook for 1 minute, stirring constantly. Toss in snap peas and carrots, and cook for 4 to 6 minutes until they are crisp-tender. Finally, add shrimp and cook for 3 to 5 minutes until they turn pink, stirring occasionally.
  • Blend in fresh basil, zest of lemon, and the seasoning mixture. Mix in the remaining 1 tablespoon of butter and the pasta. Cook for about 1 minute, stirring occasionally, until the butter is fully melted.
