Lemon-Garlic Broccoli with Yellow Peppers

Quick and tasty broccoli and bell pepper side dish ready in just 20 minutes.
Ingredients:
  • 4 cups fresh broccoli florets (about 10 oz)
  • 1/2 cup bite-size strips yellow bell pepper
  • 1 tablespoon olive oil
  • 1 clove garlic, finely chopped
  • 1 tablespoon water
  • 1 teaspoon grated lemon peel
Instructions:
  • In a 3-quart saucepan, bring 4 cups of water to a boil. Add the broccoli and continue boiling uncovered for 2 minutes.
  • Throw in vibrant bell pepper slices to the bubbling water, cooking for 1 to 2 minutes until the veggies are perfectly crisp-tender. Drain and gracefully transfer them out of the saucepan.
  • In the same saucepan, sauté garlic in oil over medium heat until golden, stirring occasionally. Add 1 tablespoon water, lemon peel, and salt. Mix in broccoli mixture until coated.
