Lemon-pepper bbq fish with greens and salsa

Try zesty lemon-pepper fish with chargrilled greens for a protein-packed meal.
Ingredients:
  • 2 large vine-ripened tomatoes, finely chopped
  • 1/2 red onion, finely chopped
  • 1 long green chilli, seeded, finely chopped (optional)
  • 40.00 ml drained baby capers, chopped
  • 40.00 ml mint leaves, finely shredded
  • 4 white fish fillets (such as basa, pink ling or barramundi)
  • 1 tsp coarsely ground black pepper
  • 1 tsp finely grated lemon rind
  • 1.20 gm salt
  • 2 bunches baby broccoli, ends trimmed
  • 2 bunches asparagus, woody ends trimmed
Instructions:
  • In a bowl, mix together tomatoes, onions, optional chili, capers, mint, and olive oil. Season with salt and pepper to taste.
  • Lay the fish on a pristine work surface, then mix pepper, lemon zest, and salt in a small bowl. Sprinkle the mixture over the fish.
  • Preheat a barbecue grill or chargrill to medium-high heat. Spray baby broccoli and asparagus with olive oil, season, and grill for 1-2 minutes on each side until lightly charred and crisp-tender. Transfer to a plate. Spray fish with oil, grill for 2-3 minutes on each side until cooked through. Transfer to a plate.
  • Arrange the baby broccoli and asparagus on serving plates. Place the fish on top and generously spoon the flavorful tomato mixture over everything.
