Revitalize green beans with zesty lemon, rich olive oil, and impeccable seasoning.
Ingredients:
  • extra virgin olive oil
  • 300 g green beans
Instructions:
  • Finely grate the lemon zest into a large bowl, then squeeze in the juice from half of the lemon. Add 1 tablespoon of extra virgin olive oil, and season with sea salt and freshly ground black pepper. Mix thoroughly. Boil a pot of salted water. Trim the beans while waiting. Steam or boil the beans in the boiling water until tender. Drain well and add them to the bowl with the dressing. Toss to coat the beans evenly. Taste and add more lemon juice if desired. Serve hot.
