Mexican ground beef lettuce wraps: A delicious, low-carb twist on taco night!
Ingredients:
  • 1 green bell pepper, chopped
  • 1 yellow onion, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons chicken stock
  • 1 pound ground beef
  • 3 tablespoons taco seasoning
  • 2 large roma (plum) tomatoes, chopped
  • 1 (8 ounce) package shredded Cheddar cheese
  • 12 large romaine lettuce leaves
Instructions:
  • Sautee green bell pepper and yellow onion in a skillet with olive oil and chicken broth over medium heat until the onion turns translucent, approximately 5 minutes.
  • Cook the ground beef in a separate skillet over medium heat with taco seasoning, stirring occasionally until beef is browned and crumbly, about 5 to 8 minutes. Remove excess grease by draining.
  • Season the tomatoes with a pinch of salt in one bowl. Transfer the Cheddar cheese to a separate bowl.
  • Spoon about 2 tablespoons of beef filling into each lettuce leaf. Top with 1 to 2 teaspoons of green pepper mixture, tomato, and roughly 1 1/2 tablespoons of Cheddar cheese.
