Delicious strawberry layer cake with cream cheese filling and whipped cream frosting.
Ingredients:
  • 1 (15.25 ounce) package white cake mix (such as Pillsbury® Moist Supreme Classic White Cake Mix)
  • 1 cup water
  • 3 eggs
  • 0.5 cup vegetable oil
  • 1 (3 ounce) package strawberry-flavored gelatin (such as Jell-O®)
  • 4 teaspoons strawberry extract, divided
  • 2 cups fresh strawberries
  • 1 (8 ounce) package cream cheese, softened
  • 0.5 cup confectioners' sugar, or more to taste
  • 1 pint heavy cream
  • 2 teaspoons clear vanilla extract
Instructions:
  • Prepare the oven by preheating it to 350 degrees F (175 degrees C, lining three 9-inch round cake pans with parchment paper.
  • In a bowl, use an electric mixer to beat together cake mix, water, eggs, and oil on medium speed for 2 minutes. Pour 1/3 of the batter into one prepared pan. Stir in half of the strawberry-flavored gelatin and 2 teaspoons of strawberry extract into the rest of the batter. Pour this mixture into the remaining two pans evenly.
  • Bake cakes in the preheated oven for 15-20 minutes until a toothpick inserted in the center comes out clean. Cool cakes completely by inverting them onto a large wire rack lined with parchment paper.
  • Reserve 9 to 12 whole strawberries for garnish. Dice the rest of the strawberries and gently dry them with a paper towel.
  • Combine cream cheese and strawberry-flavored gelatin, then mix in strawberry extract, confectioners' sugar, and chopped strawberries until smooth.
  • Start by elegantly laying down one pink layer on a beautiful cake plate. Delicately spread half of the luscious strawberry filling on top. Gently place the plain cake layer over it, followed by the rest of the irresistible strawberry filling. Finish by elegantly positioning the second pink layer on the very top.
  • Prepare a velvety frosting by whipping together heavy cream, confectioners' sugar, and vanilla extract until thick. Frost the cake generously, then lay a piece of parchment paper on top. Smooth the top with a spatula by gliding it over the paper, then gently peel it off.
  • Pipe a generous amount of frosting around the rim of the cake in a swirling motion, then elegantly place whole strawberries on top.
