Lime and coconut microwave puddings recipe

Make quick and comforting lime coconut microwave puddings for a cozy winter evening.
Ingredients:
  • 100g self-raising flour
  • 220g caster sugar
  • 40g shredded coconut
  • 125ml coconut cream
  • 2 Free Range Eggs, lightly whisked
  • 1 tsp finely grated lime rind
  • 80ml lime juice
  • 185ml water
  • Whipped cream, to serve
  • Shredded coconut, extra, toasted, to serve
  • Lime zest, to serve
Instructions:
  • In a large bowl, mix together the flour, ⅔ cup (150g) sugar, shredded coconut, coconut cream, egg, lime zest, and half of the lime juice.
  • Evenly distribute the mixture among four 350ml microwave-safe mugs. Sprinkle the remaining sugar on top.
  • Mix the boiling water with the rest of the lime juice in a heatproof jug, then gracefully pour the lime juice mixture over the spoon onto the puddings in the mugs.
  • Arrange the mugs on the outer edge of the microwave plate. Microwave on medium for 8 minutes or until a skewer inserted in the centers comes out clean.
  • Finish the puddings by generously dolloping whipped cream on top, then sprinkle with fresh lime zest and an extra helping of shredded coconut.
