Elevate your dinner party with this refreshing sorbet aperitif or palate cleanser.
Ingredients:
  • 500.00 gm water
  • 285.95 gm caster sugar
  • 5 thick strips lemon rind
  • 131.25 gm lemon juice
  • 125.00 ml limoncello
  • 4 lemon halves, hollowed out, frozen, to serve (optional)
Instructions:
  • Combine water, sugar, and rind in a saucepan over medium-high heat. Stir constantly for 2 minutes until the sugar dissolves. Let it simmer for 3 minutes, then cool.
  • Combine the tangy lemon juice and flavorful limoncello, then pour the mixture into a jug. Cover it and let it chill in the fridge for 4 hours. Finally, remove and discard the rind before serving.
  • Churn in an ice-cream maker for 25 minutes or until sorbet consistency is achieved. Optionally, serve in frozen hollowed-out lemon halves.
