Elevate seafood pasta with a marinara twist on traditional Napoletana sauce.
Ingredients:
  • 18.20 gm olive oil
  • 1 medium brown onion, finely chopped
  • 2 garlic cloves, crushed
  • 44.40 gm tomato paste
  • 125.00 gm white wine
  • 2 x 400g cans diced tomatoes
  • 5.00 gm caster sugar
  • 600g marinara mix
  • 20.00 ml finely chopped fresh oregano
  • 40.00 ml finely chopped fresh basil leaves
  • 375g linguine
Instructions:
  • In a saucepan over medium heat, heat oil until shimmering. Add onion and cook, stirring occasionally, for 5 minutes until softened. Add garlic and cook for 1 minute until fragrant.
  • Stir in the tomato paste and cook for a minute. Add the fresh tomato, white wine, and sugar.
  • Bring the mixture to a boil, then lower the heat to simmer for 20 to 30 minutes until the sauce slightly thickens. Stir in marinara mix, oregano, and basil, then season with salt and pepper. Increase the heat to medium and cook for 5 to 6 minutes until the seafood is fully cooked.
  • Cook the pasta in a saucepan of boiling salted water according to the package instructions until tender, then drain. Serve by tossing the sauce with the pasta.
