Creamy, butter-free clam sauce in high demand.
Ingredients:
  • 1 (16 ounce) package linguine pasta
  • 4 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 2 (6.5 ounce) cans minced clams, drained with juice reserved
  • 1.5 cups milk
  • 2 tablespoons white wine
  • 0.5 teaspoon chopped fresh parsley
  • 0.25 teaspoon pepper
Instructions:
  • Bring a pot of salted water to a rolling boil. Cook pasta for 8 to 10 minutes until perfectly al dente, then drain.
  • In a large heavy skillet over medium heat, saute the onion and garlic in olive oil until soft and translucent. Add flour, then the reserved clam juice, blending in the milk gradually. Stir in wine and parsley and cook for about 5 minutes until the sauce thickens. Finally, mix in the clams and spoon the sauce over cooked pasta.
