Cheesy bacon jicama fries - a lower carb twist on classic fries.
Ingredients:
  • 2.25 cups jicama sticks
  • 3 slices bacon
  • 2 tablespoons avocado oil, divided
  • 0.66666668653488 cup shredded Cheddar cheese
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and line a sheet pan with parchment paper for easy cleanup.
  • Bring a pot of salted water to a boil, then add quartered jicama sticks and boil for 10 minutes.
  • In a large skillet over medium-high heat, crisp up the bacon until golden brown, turning occasionally, for about 10 minutes. Transfer the cooked bacon to paper towels to drain and cool before crumbling. Set aside the flavorful bacon grease. Remove the jicama from the water and pat dry.
  • Coat jicama in bowl with bacon grease and 1 tablespoon avocado oil. Spread out in single layer on prepared pan.
  • After baking for 30 minutes, switch to the broiler setting.
  • In a skillet, heat the remaining tablespoon of avocado oil. Add the jicama and fry until crisp, about 5 minutes.
  • Return the jicama to the baking pan. Sprinkle with salt, top with Cheddar cheese and crumbled bacon. Broil for about 3 minutes until the cheese is melted.
