Perfect day for Valentine's Day cupcakes!
Ingredients:
  • 220g unsalted butter, softened
  • 400g (2 cups, firmly packed) dark brown sugar
  • 2 eggs
  • 4.40 gm vanilla extract
  • 100g dark chocolate, melted, cooled
  • 2.50 gm bicarbonate soda
  • 200g plain flour
  • Pure icing sugar, sifted, to dust
  • 500g packet ready-made icing
  • 2 packets (22g each) love-heart lollies*
Instructions:
  • 1. Preheat the oven to 180°C. Line a muffin tin with paper liners. 2. In an electric mixer, blend the butter and sugar for about 5 minutes until creamy. 3. Beat in the eggs one at a time, ensuring each is well incorporated. 4. Gently fold in the vanilla and chocolate, being careful not to overmix. 5. Combine bicarbonate soda with the flour, and sift into the mixture alternately with 1 cup of boiling water. 6. Stir until the batter is smooth and just combined.
  • Fill the paper cases three-quarters full and bake for 30 minutes or until risen. Then, remove from the oven and allow to cool.
  • Sprinkle icing sugar on the workbench and roll out the icing to 2mm thickness. Cut out circles with a fluted pastry cutter, matching the size of the cakes. Place one on each cake, shaping it to fit. Gently press a lolly into the center of each cake.
