Lisa's delightful caramel popcorn with licorice and pretzel bits is a perfect blend of salty, sweet, chewy, and crunchy flavors.
Ingredients:
  • 1 teaspoon baking soda
  • 2 teaspoons vanilla extract
  • 1 tablespoon vegetable oil, or as needed
  • 1 cup unpopped popcorn
  • 1 cup chopped strawberry licorice twists (such as Twizzlers®)
  • 2 cups broken small pretzels
  • 2.5 cups brown sugar
  • 2 cups butter
  • 1 cup light corn syrup
  • 1 teaspoon cream of tartar
  • sea salt to taste
Instructions:
  • Prepare 2 large baking sheets by lining them with parchment paper. Then, measure out the baking soda and vanilla extract into separate small bowls and set them aside.
  • In a large saucepan, warm vegetable oil, then add popcorn. Cover and cook, shaking frequently, until all kernels have popped, around 5 minutes. Strain or use your hands to transfer the popcorn to a roasting pan, leaving unpopped kernels behind. Spread chopped licorice and broken pretzels evenly over the popcorn.
  • In a heavy pot, combine brown sugar, butter, corn syrup, and cream of tartar. Bring to a boil while stirring constantly. Insert a candy thermometer into the mixture and cook, stirring constantly, until it reaches 265 degrees F (129 degrees C), approximately 10 minutes.
  • Take the caramel off the heat and mix in vanilla and baking soda, creating a foamy rise. Pour the hot caramel over the popcorn mixture, gently stirring to coat everything evenly. Spread the popcorn onto baking sheets and season with sea salt to taste. Allow it to cool for about 20 minutes before enjoying.
  • Crush the popcorn mixture into large chunks and place them in airtight bags or containers for storage.
