Low-fat apple strudel rolls

Irresistible apple strudel rolls paired with a scoop of light ice cream are a perfect treat served warm.
Ingredients:
  • 425g can apple pie fruit
  • 27.20 gm sultanas
  • 0.63 gm ground nutmeg
  • 0.63 gm ground cinnamon
  • 40.00 gm caster sugar
  • 4 sheets filo pastry
  • low-fat ice-cream, to serve
Instructions:
  • Preheat the oven to 200ºC. Line a baking tray with baking paper. In a bowl, toss together apples, sultanas, spices, and half of the sugar until well mixed.
  • Place a sheet of filo on a clean work surface, keeping the rest covered with a damp tea towel. Lightly spray the filo with oil and fold it in half. Spray with oil again and place 2 heaped tablespoons of apple mixture along one long end.
  • Wrap the apple filling, then make 3 small slits on top of the pastry. Spray with oil and sprinkle 1 teaspoon of sugar on top. Repeat with the rest of the pastry, apple mixture, and sugar.
  • Transfer to the baking tray and bake until golden brown, for 15-20 minutes. Enjoy warm with a scoop of ice cream.
