Elevate your gin and tonic with fresh lychees and mint for an exotic touch.
Ingredients:
  • 20 canned lychees or fresh lychees, peeled, stones removed
  • 20.00 gm caster sugar
  • 82.50 ml fresh mint leaves, torn
  • 185ml (3/4 cup) gin
  • Chilled tonic water, to serve
Instructions:
  • Distribute the lychee and sugar evenly among four 200ml-capacity serving glasses. Use a cocktail muddling stick or the end of a rolling pin to lightly crush the lychee mixture.
  • Sprinkle in the fresh mint, then generously pour in the gin. Finish by adding a layer of crushed ice and topping off with the refreshing tonic water. Serve alongside Crab, Chilli & Mint Witlof Leaves for a perfect pairing (refer to related recipe).
