Mint and lychee create a refreshing dessert combo.
Ingredients:
  • 500ml (2 cups) water
  • 155g (3/4 cup) caster sugar
  • 565g can lychees in syrup, drained
  • 1 bunch fresh mint, leaves picked, coarsely chopped
Instructions:
  • Chill a 20cm x 30cm metal slice pan in the freezer.
  • In a small saucepan over medium heat, combine water and sugar, stirring for 5 minutes until the sugar dissolves. Bring to a boil, then remove from heat and let cool completely for about 1 hour.
  • Blend sugar mixture, lychees, and mint until smooth. Pour into prepared pan, cover with foil, and freeze for 2 hours until icy around the edges. Every 30 minutes, break up mixture with a fork to create coarse crystals. Freeze for an additional 2 hours until firm.
  • Scoop the granita into individual serving glasses.
