Vibrant and effortless salad perfect for any night.
Ingredients:
  • 2 x 310g cans mandarin segments, drained
  • 1 large red capsicum, deseeded, thinly sliced
  • 2 large carrots, coarsely grated
  • 60g snow pea sprouts, trimmed
  • 3 shallots, trimmed, sliced
  • 90g pecan
  • 12.00 gm sesame seeds, toasted
  • 27.30 gm extra virgin olive oil
  • 20.00 ml red wine vinegar
  • 14.40 gm honey
  • 3cm piece fresh ginger, finely grated
Instructions:
  • Combine the dressing ingredients in a small bowl and whisk until fully incorporated.
  • Combine all the remaining ingredients in a large serving bowl, then drizzle with the dressing and gently toss to mix everything together.
