Chill out with this delicious mango, lime, and coconut semifreddo - a luxurious summer treat.
Ingredients:
  • 2 large mangoes
  • 2 tsp lime zest, finely grated
  • 21.00 gm lime juice
  • 27.50 gm moist coconut flakes
  • 3 Brand free range eggs
  • 3 Brand free range egg yolks
  • 215.00 gm caster sugar
  • 600ml Brand thickened cream
Instructions:
  • Peel mangoes and remove flesh from the stones. Blend in a food processor with lime zest and juice until smooth. Chill in the fridge until ready to use.
  • Toast coconut in a dry pan over medium heat, stirring frequently, until golden brown, about 1 minute. Transfer to a plate to cool.
  • In a heatproof bowl, combine eggs, yolks, and sugar. Set the bowl over a pan of simmering water without letting the base touch the water. Use electric beaters to beat for 5 minutes, or until the mixture is very pale, thick, and increased in volume. Remove the bowl from the pan.
  • Whip cream in a separate bowl until it forms firm peaks. Gently fold the whipped cream into the egg mixture until well combined. Then, delicately fold in the mango puree and toasted coconut. Transfer the mixture to a loaf tin and freeze it overnight, or until it becomes firm.
