Mango-filled bars on macadamia crust, perfect for kids on the move!
Ingredients:
  • 2 cups all-purpose flour
  • 1 cup melted butter
  • 0.5 cup confectioners' sugar
  • 0.5 cup chopped macadamia nuts
  • 4 cups chopped mangoes
  • 0.75 cup white sugar
  • 0.33333334326744 cup water
  • 1 teaspoon lemon juice
  • 4 tablespoons cornstarch
  • 3 tablespoons water
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease a 9x13-inch baking pan.
  • Mix flour, butter, and confectioners' sugar in a bowl, then add macadamia nuts. Press half of the mixture into a 1/2-inch-thick layer in the pan to create the crust.
  • Bake in the oven until beautifully golden, for 15 to 20 minutes.
  • Combine mangoes, white sugar, water, and lemon juice in a saucepan. Simmer over medium heat until mangoes reduce by 1/3, about 7 to 10 minutes.
  • In a small bowl, mix cornstarch and 3 tablespoons of water. Add the mixture to the mango mixture and cook until thickened, about 5 to 7 minutes. Allow it to cool slightly, then pour it over the crust. Sprinkle the rest of the flour mixture on top.
  • Bake until golden brown for 20 to 25 minutes. Allow to cool and set for about 15 minutes, then slice into bars.
