Satisfying mango oat bars with a tropical flair. Perfect for breakfast or a snack on-the-go. Sunshine in every bite.
Ingredients:
  • 375g chopped frozen mango
  • 150g wholemeal spelt flour, plus 2 tsp extra
  • 2.50 gm ground cinnamon
  • 100g (1 cup) rolled oats
  • 25.60 gm coconut sugar, plus 2 tsp extra
  • 20g (¼ cup) desiccated coconut
  • 2 ½ tbsp honey
  • 80ml (1/3 cup) macadamia oil
  • ¼ tsp bicarbonate of soda
  • 40.00 ml flaked natural almonds
Instructions:
  • Thaw the mango in a sieve over a bowl.
  • Preheat your oven to 190°C/170°C fan forced. Line a 19cm square baking pan with parchment paper, leaving some overhang on two sides.
  • In a large bowl, combine the flour and cinnamon by sifting them together. Add the oats, coconut sugar, and coconut, and stir well to combine.
  • In a small saucepan over medium heat, stir together the honey, oil, and 1 tbsp water until well combined and just simmering. Add bicarbonate of soda (baking soda) and stir until the mixture bubbles. Pour this mixture into the dry ingredients and stir until well combined.
  • Evenly spread two-thirds of the oat mixture in the prepared pan to cover the base. Bake for 12 minutes or until lightly golden. Let it cool slightly for 5 minutes before moving on.
  • After draining the mango well and discarding the juice, finely chop it and place it in a bowl. Add extra flour and extra sugar, then toss to combine. Finally, stir the almond into the remaining oat mixture.
  • Spread the mango mixture over the oat base, then sprinkle the remaining oat mixture on top. Bake for 12-15 minutes until the topping is golden. Let it cool for 10 minutes, then transfer the oat slab to a wire rack to cool completely. Cut into 12 squares before serving.
