Elevate the table with vibrant red accents for a touch of good luck and joy, inspired by Chinese tradition.
Ingredients:
  • 6.00 gm gelatine powder
  • 125ml (1/2 cup) water
  • 100g (1/2 cup) caster sugar
  • 375ml can evaporated milk, plus extra, to serve
  • 2 mangoes, flesh pureed
  • 42.00 gm fresh lime juice
  • Fresh baby mint leaves, to serve
  • Finely chopped mango, to serve
Instructions:
  • In a small bowl, place the gelatine and sprinkle it with 60ml (1/4 cup) of water. Let it soak. In a saucepan, combine sugar and the remaining water. Cook over medium heat, stirring, until the sugar dissolves. Simmer for 2 minutes until slightly thickened. Stir in the soaked gelatine mixture and evaporated milk. Cook, stirring, until the gelatine has dissolved. Add remaining ingredients.
  • Combine the mango puree and lime juice, stir well. Divide into 4 serving dishes, cover, and refrigerate for 4 hours to set. Serve with a garnish of baby mint, chopped mango, and a drizzle of extra milk.
