Ingredients:
  • 1 tablespoon lemon juice
  • 2 cups pureed mango
  • 1 (14 ounce) can sweetened condensed milk
  • 1 tablespoon rum
  • 1 cup evaporated milk
  • 6 eggs, beaten
  • 1 pinch salt
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) while preparing a shallow baking pan filled with about 1 1/2 inches of water.
  • In an 8x13 inch aluminum baking pan over medium heat, caramelize the sugar and lemon juice. Remove from heat and mix in the mango, sweetened condensed milk, cornstarch, rum, evaporated milk, eggs, and salt.
  • Place the mango mixture pan in a water bath in the preheated oven and bake for 45 minutes until set. Allow it to cool before transferring it onto a platter.
