Mangoes with cinnamon & ricotta cream

Ingredients:
  • 2 mangoes
  • 2 bananas, peeled, sliced
  • 4 passionfruit, pulp removed
  • 40.00 ml orange or grapefruit juice
  • 200g fresh ricotta
  • 57.20 gm honey
  • 0.63 gm ground cinnamon
  • 80ml thickened cream
Instructions:
  • Carefully slice the cheeks off the mango on either side of the stone. Peel the mango and cut the flesh into long strips. Combine the mango with chopped banana, passionfruit, and orange juice in a bowl, gently tossing to mix.
  • Beat ricotta, honey, and cinnamon with an electric beater until smooth. Then, mix in the thickened cream until well combined.
  • Scoop the fruit salad into individual serving bowls. Sprinkle with cinnamon and spoon ricotta cream on top before serving promptly.
