Elevate desserts with caramelized bananas.
Ingredients:
  • 3 eggs
  • 125g unsalted butter, melted, cooled
  • 200g brown sugar
  • 60ml maple syrup
  • 4.40 gm vanilla extract
  • 4 overripe bananas, mashed
  • 60g creme fraiche
  • 225g plain flour
  • 4.00 gm baking powder
  • 1.25 gm ground cinnamon
  • Icing sugar, to serve
  • Thick Greek-style yoghurt, to serve
  • 60g unsalted butter
  • 150g brown sugar
  • 3 bananas, sliced
  • 80ml thickened cream
Instructions:
  • In a pan over low heat, melt the butter with sugar, stirring until the sugar dissolves. Add the banana and cook for 2-3 minutes, turning until caramelized. Pour in the cream, then remove from heat. Keep warm for serving.
  • Preheat your oven to 180°C. Grease a 2L bundt cake pan and lightly dust with flour.
  • In an electric mixer, whip eggs, butter, brown sugar, maple syrup, and vanilla until thick, about 5 minutes. Blend in banana and creme fraiche. Fold in flour, baking powder, and cinnamon until combined. Pour batter into the pan and bake for 35 minutes or until a skewer comes out clean. Let cool for 5 minutes, then transfer to a wire rack. Dust with icing sugar and drizzle with caramel. Serve warm with caramelized bananas and yogurt.
