Banana Bundt cake with maple glaze and crispy bacon crumbles for a flavor explosion.
Ingredients:
  • 1 (15.25 ounce) package banana cake mix
  • 1 (3.5 ounce) package vanilla instant pudding mix
  • 4 large eggs
  • 1 cup water
  • 0.25 cup vegetable oil
  • 1 medium ripe banana, mashed
  • 3 slices thick-cut bacon, chopped into small pieces
  • 2 cups confectioners' sugar
  • 3 tablespoons milk, or more to taste
  • 3 tablespoons maple syrup
  • 2 teaspoons maple extract
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare a Bundt® pan by greasing and flouring it.
  • Combine cake mix and pudding mix in a large bowl. Create a well in the center; add eggs, water, vegetable oil, and mashed banana. Mix with an electric mixer on low speed until well combined. Scrape the sides of the bowl and continue mixing on low for 4 minutes. Rest the batter for 5 minutes before pouring into the pan.
  • Bake in the preheated oven for 50-55 minutes, until a toothpick inserted in the center comes out mostly clean. Remove from the oven and cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  • While the cake rests, crisp up the bacon in a skillet over medium-high heat until perfectly browned and almost crispy, for about 5 to 7 minutes. Transfer to a paper towel-lined plate.
  • Combine confectioners' sugar, 3 tablespoons milk, maple syrup, and maple extract in a small bowl until smooth. Adjust consistency by stirring in more milk if needed.
  • Drizzle the glaze over the cooled cake and sprinkle with bacon for a delicious finish.
