Delicious maple and brown sugar oatmeal muffins with oats, maple syrup, applesauce, and walnuts.
Ingredients:
  • 0.25 cup butter, softened
  • 0.125 cup white sugar
  • 0.125 cup brown sugar
  • 0.5 cup applesauce
  • 6 tablespoons Grade A maple syrup
  • 0.5 cup all-purpose flour
  • 0.5 cup chopped walnuts
  • 0.5 cup quick-cooking oats
  • 0.25 cup whole wheat flour
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon baking soda
Instructions:
  • Preheat your oven to 350°F (175°C) and place paper liners in a muffin tin.
  • In a large bowl, blend the butter, white sugar, and brown sugar until creamy using an electric mixer. Stir in the applesauce, maple syrup, egg, and vanilla extract until well combined.
  • In a separate bowl, mix together flour, walnuts, oats, whole wheat flour, baking powder, baking soda, cinnamon, and salt. Add this mixture to the butter mixture and stir until all ingredients are just moistened.
  • Carefully portion the batter into the lined muffin cups, ensuring each cup is filled to about 2/3 of its capacity.
  • Bake in the preheated oven for 15 to 18 minutes until a toothpick inserted into the center comes out clean. Let it cool in the tin for a few minutes before removing.
