Maple syrup-infused custard ice cream with a taste of homemade sweetness.
Ingredients:
  • 1 cup maple syrup, divided
  • 8 egg yolks
  • 3 cups half-and-half
  • 1 cup heavy cream
  • 1 pinch salt
Instructions:
  • In a medium bowl, combine 1/2 cup of maple syrup with the egg yolks and whisk until smooth. Let it sit for now.
  • Combine the rest of the maple syrup, half-and-half, cream, and salt in a medium saucepan. Heat over medium-high heat while stirring frequently until it simmers. Then, lower the heat to medium.
  • Gradually introduce half a cup of the hot cream mixture to the egg mixture, whisking diligently to avoid curdling. Repeat with another half cup of the cream mixture. Transfer the egg blend into the saucepan, stirring continuously with a heatproof spatula. Cook until the custard thickens and coats the spatula's back, usually 1 to 2 minutes. Remove from heat.
  • Pass the custard through a fine-mesh sieve into a clean bowl. Blend in the vanilla extract. Place the bowl in an ice bath and stir occasionally until the custard cools to room temperature, around 15 to 30 minutes.
  • Take the bowl out of the ice bath, cover it with plastic wrap, and chill in the refrigerator for 2 to 4 hours, or overnight.
  • Place the cold custard in an ice cream maker and follow the manufacturer's instructions to churn it until it resembles soft serve ice cream. Enjoy immediately or cover with plastic wrap and freeze until firm.
