Maple Walnut Ice Cream

Indulgent maple walnut ice cream featuring double the pure maple syrup for a rich, sweet flavor in both the cream and the walnuts.
Ingredients:
  • 5 egg yolks
  • 1.5 cups milk
  • 1 tablespoon corn syrup
  • 0.75 cup maple syrup
  • 0.125 teaspoon coarse salt
  • 0.25 teaspoon vanilla extract
  • 1.5 cups walnut halves
  • 0.5 cup maple syrup
  • 1 tablespoon maple syrup
Instructions:
  • In a large bowl, gently pour the cream and place a mesh strainer over it. In another bowl, whisk the egg yolks until well combined.
  • Warm milk, sugar, and corn syrup in a saucepan over gentle heat until milk gently steams for about 5 minutes. Gradually blend around 1/2 cup of warm milk into the egg yolks, whisking continuously. Combine the egg yolk mixture into the saucepan using a heatproof spatula.
  • Constantly stir the milk mixture with a spatula, making sure to scrape the bottom of the saucepan often. Cook until the mixture thickens and coats the spatula, about 10 minutes. Remove saucepan from heat and strain the mixture through a mesh strainer into the cream.
  • Combine 3/4 cup maple syrup, coarse salt, and vanilla into the cream mixture. Place the bowl over ice water and stir until it cools to room temperature. Refrigerate the mixture for about 2 hours to chill.
  • Preheat the oven to 275 degrees F (135 degrees C) and scatter walnuts on a baking sheet.
  • Place walnuts in the preheated oven until they are golden brown and fragrant, for about 15 minutes. Allow the nuts to cool to room temperature before roughly chopping them.
  • In a saucepan, bring the 1/2 cup plus 1 tablespoon of maple syrup to a boil. Add walnuts and bring to a boil again. Stir the nuts for 10 seconds, then remove from heat and let cool. The nuts will be moist and sticky once cooled.
  • Take the chilled cream mixture out of the refrigerator, transfer it to your ice cream maker, and freeze following the manufacturer's guidelines. As the ice cream nears completion, fold in the wet walnuts.
