New England's signature sweetness, maple syrup, shines in this elegant dessert.
Ingredients:
  • 4 egg yolks
  • 185ml (3/4 cup) maple syrup
  • 1 x 600ml ctn thickened cream
  • 400g soft dried dessert figs
  • 185ml (3/4 cup) water
  • 1 x 7cm cinnamon stick
  • 60ml (1/4 cup) maple syrup, extra
Instructions:
  • Whisk egg yolks and maple syrup in a heatproof bowl until combined. Place bowl over simmering water, ensuring it doesn't touch the water. Whisk for 5-7 minutes until thickened. Let cool.
  • Whip the cream with an electric beater until soft peaks form. Carefully fold the whipped cream into the egg mixture. Divide the mixture among eight 185ml (3/4-cup) serving glasses. Chill in the fridge for at least 3 hours or overnight until set.
  • In a medium saucepan over medium heat, combine the figs, water, cinnamon, and extra maple syrup. Bring to a boil, then simmer for 10 minutes until the figs are plump and the syrup thickens. Allow it to cool, then transfer to a bowl, cover with plastic wrap, and refrigerate to chill.
  • Serve the mousse garnished with fresh figs and drizzled with syrup.
