Maple pecan granola with spiced dried fruit - perfect on yogurt or as a tasty snack!
Ingredients:
  • 6 cups old-fashioned oats
  • 1.5 cups finely chopped pecans
  • 0.5 cup finely chopped almonds
  • 0.5 cup vegetable oil
  • 0.5 cup pure maple syrup
  • 0.33333334326744 cup boiling water
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground cardamom
  • 0.75 cup minced dates
  • 0.75 cup minced raisins
  • 0.66666668653488 cup minced dried cranberries
Instructions:
  • Preheat your oven to a toasty 325 degrees F (165 degrees C).
  • In a bowl, combine oats, pecans, and almonds. In a measuring cup, whisk together oil, maple syrup, and water. Pour the mixture over the oats and stir well until everything is evenly coated. Spread the mixture onto 2 baking sheets.
  • Bake in the preheated oven for 12 minutes. Stir and bake for another 12 minutes until golden brown. Allow the granola to cool to room temperature.
  • In a lidded container, combine cinnamon and cardamom. Add dates, raisins, and cranberries. Shake well to coat the fruit mixture. Fold in dried fruit into cooled granola mixture.
