Try these irresistible maple pecan glazed sweet potatoes for a delicious side dish!
Ingredients:
  • 1 cup apple juice
  • 4 teaspoons cornstarch
  • 1/2 cup maple-flavored syrup
  • 1/2 teaspoon cinnamon
  • 1 tablespoon margarine
  • 1/8 teaspoon salt
  • 2 lb. sweet potatoes (about 3 large), peeled, cut into 3/4-inch cubes (about 5 cups)
  • 2 tablespoons chopped pecans
Instructions:
  • Combine 2 tablespoons of apple juice and cornstarch in a small bowl, mixing well. Set aside.
  • Combine the remaining apple juice, syrup, cinnamon, margarine, and salt in a large nonstick skillet or Dutch oven. Bring the mixture to a boil. Add the potatoes and stir well to coat. Cover and simmer for 8 to 10 minutes until the potatoes are tender.
  • Combine the cornstarch mixture with the potato mixture and cook over medium-high heat until it thickens and becomes bubbly. Transfer into a serving bowl and top with pecans.
