Canadian maple and crunchy walnuts create a tasty twist on traditional Italian biscotti.
Ingredients:
  • 3.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 0.5 cup butter, softened
  • 0.5 cup white sugar
  • 0.5 cup maple syrup
  • 1 teaspoon maple extract
  • 1 cup chopped walnuts
  • 1 tablespoon melted butter
  • 0.25 cup maple syrup
  • 0.75 cup confectioners' sugar
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare a baking sheet by lining it with parchment paper.
  • Combine the flour, baking powder, and salt by sifting them in a bowl.
  • Using an electric mixer, blend softened butter and sugar in a large bowl until smooth. Add one egg and mix until fully incorporated, then add the second egg, 1/2 cup maple syrup, and maple extract. Gently mix in the flour mixture until a dough forms, then fold in the walnuts until combined.
  • Split dough in half. Form each half into a log matching the length of the baking sheet and place on the prepared sheet. Press down on each log to create a rectangle shape that is 3 inches wide and 1 inch tall.
  • Bake in the preheated oven for 30 minutes until the bottom is lightly browned and the top is slightly cracked. Allow it to cool for 15 minutes before continuing, keeping the oven on.
  • Cut logs diagonally into 1/2-inch thick slices and arrange them on the baking sheet on their sides.
  • Bake biscotti until they are lightly browned and crisp, about 8 minutes in the preheated oven. Then, remove from oven and let cool for a few minutes.
  • Combine melted butter and maple syrup in a bowl, then gradually mix in confectioners' sugar until smooth. Lightly drizzle the maple glaze over warm biscotti using a spoon.
