Incorporate a summer twist into your Christmas feast with this traditional recipe.
Ingredients:
  • 4-5 kg whole leg ham on the bone
  • 30 cloves
  • 250g brown sugar
  • 2 tsp mustard powder
  • 60ml verjuice
  • 60ml maple syrup
Instructions:
  • Preheat the oven to 180°C for the perfect cooking temperature.
  • Peel the skin off the ham, keeping the fat layer intact. Score the fat in a diamond pattern and gently press 1 clove into each diamond.
  • Place the ham on a rack in a spacious roasting pan and pour 3cm of warm water into the pan to prevent the glaze from burning while it drips.
  • In a saucepan over low heat, blend the brown sugar, mustard powder, verjuice, and maple syrup, whisking gently until the mustard is dissolved.
  • Gently coat ham with glaze, then bake for 45 minutes, basting with remaining glaze 4 or 5 times until it's heated through and beautifully glazed. Let it rest for 20 minutes before serving.
