Maple and walnut-glazed ham

Elevate your Christmas feast with a delectable maple walnut-glazed ham.
Ingredients:
  • 9kg cooked leg ham
  • 222.75 gm maple syrup
  • 141.90 gm caster sugar
  • 73.13 gm wholegrain mustard
  • 320g packet Natural Californian Walnuts
Instructions:
  • Preheat your oven to 180°C (160°C fan-forced).
  • Trim the ham shank with a small sharp knife, leaving about a 10cm edge. Carefully detach the rind by sliding the knife underneath, working around the edge. Peel the rind off in one piece by sliding your fingers between the rind and the fat. Discard the rind. Position the ham on a lightly greased wire rack inside a large roasting pan. Add enough boiling water to the pan to reach 2cm up the side.
  • Combine maple syrup, sugar, and mustard in a small saucepan over low heat, stirring until the sugar dissolves. Brush half of the maple mixture onto the ham to coat evenly. Secure the ham hock with foil to avoid burning and bake for 1 hour until golden brown.
  • Finely chop walnuts by hand or pulse in a food processor until finely chopped.
  • Brush the ham with a generous coat of the remaining sweet maple glaze, and delicately press the crunchy walnuts into the ham to create a delicious crust. Bake until beautifully golden, then let it rest for 15 minutes. Remove the foil from the shank, and serve the ham drizzled with the remaining maple glaze.
