Maple-glazed ham

Indulge in a festive classic: roasted leg of ham for Christmas.
Ingredients:
  • 350g fine-cut orange marmalade (we used Rose's Fine-Cut Marmalade)
  • 125ml maple syrup
  • 125g brown sugar
  • 250ml orange juice
  • 6kg whole leg ham on the bone
  • Whole cloves, to stud
Instructions:
  • Combine marmalade, syrup, sugar, and juice in a saucepan over low heat. Stir and cook until the marmalade dissolves, about 3-4 minutes. Increase heat to medium-low and simmer for 10 minutes until reduced by half.
  • Preheat the oven to 170°C. Score the fat of the ham in a diamond pattern, then press one clove into each diamond. Remove the skin carefully and discard.
  • Fill a large roasting pan with water until it reaches 2cm up the sides. This will ensure the glaze doesn't burn while dripping. Place a wire rack in the pan and position the ham on top. Cover the ham shank with foil.
  • Coat ham with a touch of glaze, then bake for 1 hour. Baste every 15 minutes with the extra glaze and add water as needed until golden brown.
