Elevate any occasion with versatile homemade antipasto – a Mediterranean staple perfect for BBQs, gatherings, or as a sandwich upgrade.
Ingredients:
  • 2 x 400g cans artichoke hearts, drained, halved
  • 3 thick strips lemon rind
  • 2 small red chillies, deseeded, thinly sliced
  • 40.00 ml white wine vinegar
  • 56.88 gm extra-virgin olive oil
  • 40.00 ml coarsely chopped fresh flat-leaf parsley leaves
  • 2 garlic cloves, halved, thinly sliced
Instructions:
  • Dry artichokes thoroughly with paper towel. In a glass or ceramic bowl, mix artichokes with lemon rind, chili, vinegar, oil, parsley, and garlic. Cover and refrigerate for a minimum of 2 days to enhance flavors, remembering to stir twice daily.
