Spice brined pork chops baked to perfection for a simple and flavorful weeknight meal.
Ingredients:
  • 1 cup water
  • 0.5 cup salt
  • 1 tablespoon dried sage
  • 1 tablespoon garlic powder
  • 10 cups cold water
  • 2.5 pounds pork loin chops
  • 2 tablespoons olive oil, or as needed, divided
Instructions:
  • In a saucepan, bring 1 cup of water to a boil. Stir in salt, sugar, sage, and garlic powder until mostly dissolved. Remove from heat. Cool the brining mixture by adding cold water. Place pork chops in a plastic freezer bag or airtight container. Pour in the brining liquid, seal tightly, and refrigerate for 6 hours.
  • Preheat the oven to 325°F (165°C) and generously coat a baking dish with 1 1/2 tablespoons of olive oil.
  • After draining the pork chops, discard the brine. Place the chops in the prepared dish and lightly brush them with the remaining olive oil.
  • Roast the pork chops in the preheated oven for about 40 minutes, or until they are no longer pink in the center and the juice runs clear. Ensure the internal temperature reaches 145 degrees F (63 degrees C) when checked with an instant-read thermometer.
