Marinated fetta and dill baked omelette

Satisfy a hungry crowd with our flavorful marinated feta and dill omelette.
Ingredients:
  • 10 eggs
  • 126.25 gm pure cream
  • 187.50 ml finely grated parmesan
  • 2 green onions, chopped
  • 40.00 ml chopped fresh dill
  • 1/2 x 350g tub marinated fetta, drained, lightly crushed
  • 99.00 gm basil pesto, to serve
Instructions:
  • Preheat the oven to 180C/160C fan-forced. Grease a 20cm x 30cm lamington pan and line the base and sides with baking paper, leaving a 2cm overhang above the edges of the pan.
  • In a bowl, whisk together eggs, cream, parmesan, and garlic until combined. Add onion and dill, season with salt and pepper. Pour the mixture into a prepared pan and sprinkle with fetta. Bake for 15 to 20 minutes until just firm to touch. Let it stand for 10 minutes before serving.
  • Cut the omelette into pieces and top each piece with a dollop of pesto for a flavorful finish.
